The Wine: All blocks processed separately. 10% whole bunch in base of fermenter and gently destemmed the balance on top. Total time on skins 30 days. Gentle hand plunged twice a day while actively fermenting. Basket pressed to tank before going into oak. About 20 % new French oak. Thirteen months in oak before blending and bottling.

A little more dark fruited in the vintage with plum and dark cherry. There a nice herbal edge with spice. The palate has wonderful depth. Wonderful core of fruits with dark cherry lingering.

Cobaw Ridge

Cobaw Ridge winery was established in 1985 by Alan and Nelly Cooper. Vines were planted on granitic, sandy soil in the cool climate Macedon Ranges, on the cusp of the Great Dividing Range at some 610m. Their positioning, in a natural amphitheatre, provides the perfect place to produce terroir-driven wines. 100% estate grown, they are now fully certified organic and biodynamic, something they are very proud of, and deservedly so.
